What I Ate Wednesday

WIAW: An Intersting Mix

Yesterday was an interesting mix of eats starting with breakfast which was leftover panang curry with tofu, veggies and brown rice. It was so good I just couldn’t wait to lunch to eat it.
Breakfast:

Lunch: Since I ate my lunch for breakfast I ended up having apple slices topped with a drizzle of almond butter and a sprinkling of Doug’s Nuts <–these things are so good. I also had a some Terra Chips which are not featured.

Dinner: Both Neil and I were super hungry come dinner time after a busy day and workouts so I made us each a big bowl of sun-dried tomato and spinach pesto with walnuts.  It was AMAZING, we were both tempted to stuff ourselves silly and eat our lunch portions but we resisted.  (recipe coming tomorrow)

Dessert: Instead of over indulging in pasta I had a decaf English Breakfast Tea Latte with unsweetened almond milk and a few Dr. Lucy’s Gingersnap Cookies.

WIAW: Best Of The Week

This week for What I Ate Wednesday I am featuring my favorite snacks, meals and dessert of the last week. Enjoy!

Snacks:

A nice big bowl of organic strawberries…

Terra Chips Original and I’ve been sampling the new flavors of Dr. Lucy’s Gluten Free Cookies-this week I tried Maple Bliss, they were delicious!

Lunch/Dinner: (since for the most part lunches are leftovers)

Quinoa, oven roasted asparagus (recipe here) and Sesame-Ginger Temeph-a new recipe for 360 Cookware

Linguine with tomato-eggplant sauce another new recipe for 360 Cookware

Where are the leftovers lunch: Mega Green Salad with a veggie burger and Italian Dressing

Dessert:

Hail Merry’s Meyer Lemon Miracle Tart…along with a chocolate almond butter, chocolate mint and a Persian lime <–all eaten in the last week by my husband and I and our friend Laura. These tarts are A-MAZING.

WIAW: Thai Me Up With Chocolate

We are back from vacation but I still haven’t done any major menu planning or grocery shopping this week which resulted in Thai takeout last night for dinner. It was tasty but it was a reminder that I’d much rather cook us as healthy dinner at home rather than eat out of cartons. So on the agenda today is a trip to Costco and the natural foods store to pick up the necessary goods to make healthy meals for the rest of this week/month.

Breakfast: Smoothie of frozen pineapple, frozen mango, banana, almond butter and unsweetened almond milk topped with a sprinkling of Nature’s Path  Hemp Plus Granola.  I have been addicted to Nature’s Path Hemp Plus oatmeal and now recently they sent me some of their granola and I’m addicted to it as well.  I actually just had some this morning on top of my granola to add a nice little crunch. 
Snack: Pear and another handful of Hemp Plus Granola (not photographed)
Lunch: Leftovers–> black beans, cilantro-lime brown rice, sauteed cabbage, mushrooms and onions, roasted asparagus, avocado and a nice drizzle of sriracha.
Dinner: Thai/Vietnamese Take-out –> vegetable fresh roll, lemongrass tofu and vegetables and curry noodles with vegetables and tofu.  We had leftovers of this for lunch today. 

What I DIDN’T Eat Wednesday but I did eat half of sunday with some strawberries and a scoop of coconut milk ice cream –> Chocolate Inspirations Vegan Brownie.  This brownie was so good! Neil and I both thought that it looked like it was going to be a little dry but it ended up being really moist and tasty.  I also tried a few other items over the past few weeks from Chocolate Inspirations including Peanut Butter Pillows with Chocolate, Michael’s Favorite Chocolate Combo with Pretzels (dark chocolate, vegan caramel, pretzels and peanut butter) and Vegan Caramel Corn.  I have to say my favorite was the caramel corn and I honestly love their toffees, brittles and barks which I first tried a few years ago more than the peanut butter confections.  I still have one of their hot chocolate stirrers to try and I’ll let you know how those are .

WIAW: Vacation Eats

I’ve decided to try something new on the blog this week and if I and you are digging it will (try) to keep up with it. 

This week we are on vacation but luckily this doesn’t mean we have been eating out all week because we are staying at a condo in North Myrtle Beach with my parents.  This has made our lives so much easier and I love having a place to cook all or at least most of our meals.

Breakfast: Berries, English Muffin, Hash Browns, Veggie-Pesto Tofu Scramble

Beverage: Decaf Coffee

Lunch Part 1: Salad with cranberries, almonds and apple

Lunch Part 2: Veggie and Polenta Lasagna

Snack: a million Salt and Pepper Pistachios

Beverage: Ginger Lemon Peel Herbal Water

Dinner: Guacamole, Tomato Bruschetta, Pesto Spinach-Artichoke Dip, Baked Garlic Fries and crackers, bread and tortillas.

Not Pictured: 2 oreos, 8 sour patch kids and a decaf vanilla black tea and lots of glasses of water.
