[RECIPE] Probiotic Smoothie Popsicles

This summer we have had a meal of popsicles more than once or twice this summer. These aren’t just any popsicles though and you can’t purchase them in the store. I’m talking about superfood and homemade. With Portland’s heat this summer and the lack of desire to cook has me throwing things into the blender, pouring into popsicle molds and voila there’s breakfast, lunch or dinner. I love to keep these popsicles nutrient dense, free of refined sugars and packed with superfoods.

Probiotic Smoothie Popsicles

Ingredients
  1. One Medium Banana
  2. 1 Cup Chopped Frozen Kale
  3. 12 OZ Orange Juice
  4. 3 Probiotic Capsules
  5. 1/4 Cup Blackberries
Instructions
  1. Add the banana, kale, orange juice and blackberries to a blender.
  2. Open the probiotic capsules and add to the smoothie.
  3. Blend until smoothie.
  4. Drink up or pour into popsicle molds and freeze!

Since actively taking a probiotic I have experienced better digestion and just overall I feel better. Since I’m not big on taking pills I love that I can open the capsules and add these probiotics to my smoothies and popsicles or even my oats! I am counting down the days to cool crisp weather, hot chai lattes, scarves, boots and Gilmore Girls. Portland doesn’t help with it’s crazy weather either. We have crispy leaves from too much sun, cool mornings but then as soon as noon time rolls around it’s blazing hot out. So this mornings breakfast seems pretty perfect – hot, cold, creamy and packed with nutrients!

For the Banana Ice Cream
  1. 1.5 frozen bananas
  2. 1 oz Genesis Superfood Acai 100
  3. 1 Genesis Superfoods Omega Capsule - prick and squeeze out the oil and toss the capsule
Oats
  1. 1/2 cup oats
  2. 1 cup water
Toppings
  1. berries
  2. banana
  3. coconut
  4. agave, honey, maple syrup
Instructions
  1. Blend the banana and acai together until soft serve consistency.
  2. Cook oats until soft and creamy.
  3. Add both to a bowl and top with your favorite toppings.

To boost things up a bit I decided to add Genesis Today Omega 3-6-7-9. [PNW Adventures] Yurting at Tumalo State Park

As a family with thrive on adventure. We love to get outside and explore the world around us whether it be city or stream, mountain or museum, we just love to explore. One of our most memorable adventures this summer was yurting at Tumalo State Park.

A few things to note about Tumalo while it is a really nice park those falls that share the name are unfortunately not located at the park but don’t worry they are close by so you can make a morning or day out of visiting them. Other than that I thought the park was pretty great. The yurts are on the newer side and while you need to bring all of your linens and cooking supplies there is a table with 2 chairs, a futon and a bunk bed (double, single) inside the yurt as well as electricity and heat! Outside you’ll find a covered entry way with a bench, a fire ring and a picnic table. It’s a pretty great setup. One of the features of the camp that I loved was the outdoor sinks for washing your dishes – such a nice feature! Also if you are more into tenting or have a camper there really aren’t any bad sites for you!

If you head across the street from the camping area you’ll find the day use area that has trails, lots of picnic areas and nice green area with a great spot to wade in the water. Also located at the park is a playground and there are nature paths that you can access right from the camping area. Bonus you’re only 15 minutes from downtown Bend and 20 minutes from Sisters so there certainly isn’t a shortage of things to do!

Now getting a yurt or a cabin in Oregon can be tricky because they seem to the minute that reservations are open. That being said go in see when you can make your reservation and set a calendar alert so you can jump at it. That being said I need to go do ours right now for next summer!

What To Eat When It’s Too Hot To Cook

I don’t know about where you live but here in Portland we have hit a heat wave. I’m telling you I can’t even walk out my front door without instantly breaking a sweat. Who knew the PNW could be so dang hot? Anyways all this heat has me avoiding our stove and oven like the plague. So what does one eat in a heat wave? Smoothie Bowls!

This whole idea of smoothie bowls and acai bowls is not new and it’s actually a culinary concept that I resisted for years but here I am blogging about them now because currently they are my life. They are perfect for any meal and are extremely versatile. Below is my current go-to Acai Smoothie Bowl:

  1. 1 banana
  2. 1/2 cup unsweetened vanilla almond milk
  3. 1oz Genesis Acai 100
  4. 1 cup frozen mix berries
  5. 1 scoop Genesis Trim Protein Powder

The Trim Protein from Genesis contains a mixture of quinoa, amaranth, chia and other sprouted seeds. It has 16 g of plant-based protein per serving and is packed with superfoods such acai, mangosteen and goji berry. It also contains Garcinia Cambogia a fruit native to Southeast Asia that contains hydroxycitric acid (HCA) which is known to help promote weight loss.

I add the Greens powder because it helps support healthy digestion and daily nutrition. It also contains two of my favorite superfoods spirulina because it contains many essential vitamins, minerals, essential fatty acids and 18 different amino acids and flax seeds an important source of Omega-3 fatty acids. {Recipe} GOJI 100 Lemonade | #GenesisTodaySuperfoods

This month I have the incredibly opportunity to work with Genesis Today. I’ll be working with them to share recipes using their amazing superfood products. I have been using their products for years so working them is a hugely exciting thing. 

I’ve been working on a number of recipes but the first one that came to mind was something light, refreshing and oh so Summer – LEMONADE! I love making all kinds of different lemonades so when I saw that GOJI 100 was one of the superfoods I’d be able to share I was thrilled because this stuff is super sweet and delicious. Perfect for pairing with tart lemons. 
Goji Lemonade

Ingredients
  1. 1 oz freshly squeezed lemon juice
  2. 2 oz water
  3. 1 oz Genesis Today Goji 100
  4. 2-4 teaspoons agave nectar (sweeten to taste)
  5. 12 oz glass jar filled with ice
Instructions
  1. Pour the lemon juice, water and agave over the ice, screw on the cover and shake, shake shake.
  2. Remove lid and pour the Goji 100 over.
  3. Add a glass straw and enjoy!

I made myself a personal size lemonade but I recommend making an entire pitcher of it for your fridge because one glass just won’t be enough. Besides tasting amazing there are so many incredible benefits from the GOJI 100. Goji berries can be found theHimalayan regions of Asia and is known as the ‘Happy Berry’ – what a great name right!  So think of this as Happy Berry Lemonade – now who doesn’t want to drink something that could make them a little bit happier!

I personally choose to drink GOJI 100 because it is known to supports a positive mood.  There is nothing more in life that I want than to feel relaxed, positive and vibrant.  So cheers!goji lemonade 10

Which is Better? Instagram Story v. Snapchat

I thought (like most other bloggers) I would weigh in on the new Instagram Story v. Snapchat. I have to say my initial response was no. Just no. It took me a year to finally fully embrace Snapchat and I love it so why is Instagram coming in and trying to take over. 

Image-1-1The thing is though as I have been playing around with Instagram Stories I have come to really like it. I have realized [for me] that Snapchat and Instagram Stories are two different things. Snapchat is a fun way for me to connect, be a little goofy and share a bit of my life to anyone who wants to follow me. 

Instagram Stories allows me to filter a bit more of my content so that it focuses more specifically to my followers of each of my [too] many Instagram accounts. If I want to share family things I’ll share it on my Naturally Family, healthy living/fitness/food on RunWithTongs, Essential Oils on Essentially Lindsay, health and wellness coaching on PDXHealthCoach and beauty/makeup on Naturally Lindsay.

Instagram Stories also allows me to connect with a huge range of people who I don’t follow/don’t follow me on Snapchat (I’m lindsayingalls if you do want to follow). I love being able to connect with others so for me this is the biggest selling point of Instagram Stories.

Will I be leaving Snapchat though? NO WAY! It’s such a fun spot to be on and the filters (which yes, I know IG will also have eventually). I use Snapchat to give a little highlight into my day/life. It’s basically my lazy way of daily vlogging. 

So both have their pros and cons but it seems that both Istagram Stories and Snapchat have their place in this social media world.
